How To Make Roasted Garlic Herb Rack of Pork

This roasted rack of pork is an elegant holiday dish that’s actually very simple to prepare. The meat is seasoned with thyme, rosemary, and loads of garlic.

Total: 1 hour 40 minutes

Ingredients

  • 4lbsbone-in pork rib roast,frenched
  • 2tspsalt
  • ½tspcoarse ground black pepper
  • 1tbspfresh thyme,minced
  • 2tspfresh rosemary,minced
  • 4clovesgarlic,minced
  • 2tbspolive oil

Instructions

  1. Heat oven to 325 degrees F.

  2. Season pork with salt, pepper, thyme and rosemary, garlic and olive oil.

  3. Place rack in a roasting pan fat side up (resting on the chin bone). Cook for 90 minutes or to an internal temperature of 145 degrees F.

  4. Remove from oven and let rest 15 minutes, covered loosely with foil before serving.
