How To Make Roasted Carrots with Thyme

Roasted carrots come out naturally sweet. They’re seasoned simply with thyme, pepper, salt, and olive oil and are a delicious and healthy side dish.

Total: 30 minutes

Ingredients

  • 2lbsfresh carrots,peeled
  • 2tbspextra virgin olive oil
  • ½tspkosher salt
  • ¼tspfreshly ground black pepper
  • 2tspthyme,(or ½ tsp dried), fresh chopped, plus more for serving

Instructions

  1. Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil.

  2. Slice the carrots on the diagonal about 2 inches thick. Make sure all pieces are approximately the same size to ensure even cooking.

  3. Directly on the prepared baking sheet, toss together the carrots, olive oil, salt, pepper and thyme.

  4. Roast for 20 to 25 minutes, stirring once mid-way through, until nicely caramelized and tender (cooking time will depend on thickness of carrots).

  5. Taste and adjust seasoning if necessary. Transfer to a bowl and sprinkle with more fresh thyme, if desired.
