How To Make Lemon-Zest Flavored Roasted Heirloom Carrots

Love snacking on carrots? Ditch those pre-packaged baby carrots and make these lemon-zest flavored heirloom carrots added with feta cheese and truffle oil!

  • 6small carrots,about 6oz total
  • 2tspolive oil
  • pinchKosher salt
  • black pepper,fresh, to taste
  • .375ozfeta cheese
  • ½tsplemon zest
  • 1tsplemon juice,fresh
  • ½tspwhite truffle olive oil


  1. Preheat oven to 350 degrees F.

  2. Wash, dry and trim the stems of the carrots.

  3. Place carrots on a baking sheet and drizzle with olive oil, salt and black pepper.

  4. Bake until crisp-tender and browned, about 35 minutes.

  5. While the carrots are still hot, season with more salt.

  6. Drizzle the white truffle oil, top with lemon juice, lemon zest and crumbled feta.
