How To Make Honey Roasted Carrots

Enjoy a healthy and vibrant meal with this roasted carrots recipe. Honey, parsley, and dill lend a unique flavor to some fresh baby carrots.

Preparation: 15 minutes
Cooking: 20 minutes
Total: 35 minutes
Serves:

Ingredients

  • 1 ½lbsfresh carrotstrimmed
  • 1tbsphoney
  • 1 ½tbspolive oil
  • salt & pepperto taste
  • 1tbspbutter
  • 1 ½tspfresh dill
  • 1tbspfresh parsley

Instructions

  1. Preheat oven to 425 degrees F.

  2. Wash carrots and dry well.

  3. Cut carrots accordingly based on size/type. Small garden carrots can be left whole or halved. Larger store carrots should be halved or quartered lengthwise.

  4. Mix honey and olive oil in a small bowl. Drizzle over carrots.

  5. Add salt & pepper to taste and toss well.

  6. Roast carrots for 20 to 25 minutes or until tender-crisp.

  7. Remove from oven, toss with butter, dill and parsley. Season with salt & pepper if needed.

  8. Serve warm.
