How To Make Beer Braised Pot Roast

This one-pot pot roast is beef, carrots, and potatoes stewed in a rich broth of beer, tomato paste, and various herbs and seasonings.

Ingredients

  • 5lbsbeef chuck roast
  • 2tbspcanola oil
  • 2tspkosher salt
  • 1tspcoarse ground black pepper
  • 1tspdried thyme
  • 1lbcarrots,peeled and cut into 2-inch chunks
  • 2lbsyukon gold potatoes,peeled and cut into large chunks
  • 1large onion,diced
  • 2clovesgarlic,minced
  • 1cupbeef broth
  • 12ozbeer
  • ¼cuptomato paste

Instructions

  1. Preheat your oven to 325 degrees F.

  2. Season the chuck roast with the Kosher salt, pepper and thyme.

  3. Add the canola oil to a pan and heat. When it ripples and is hot, add in the roast and brown, deeply, for 4 to 5 minutes on each side (or if possible, brown in a slow cooker.)

  4. Add carrots, potatoes, onion, garlic, beef broth, beer, and tomato paste, and cook for 3 to 3½ hours.
