This Hoppin’ Juan recipe puts a southwestern spin on a southern American favorite. It has some added spice from fresh Jalapeno peppers.

  • 2tbspbutter
  • 1yellow onion,chopped
  • 1red bell pepper,chopped
  • 2smalljalapeno peppers,chopped
  • 2garlic cloves,minced
  • 2cupswhite rice,cooked
  • 15ozblack-eyed peas,(1 can) drained and rinsed
  • 10ozdiced tomatoes with habaneros,(1 can), such as RO*TEL® Hot, drained
  • 4slicesbacon,cooked, chopped
  • salt and ground black pepper,to taste


  1. Melt butter in a large pan over medium heat; cook and stir onion, red bell pepper, jalapeno peppers, and garlic in hot butter for 5 minutes or until onion is translucent.

  2. Stir cooked rice, black-eyed peas, diced tomatoes with habanero peppers, bacon, salt, and black pepper into vegetables. Cook for 10 minutes to blend flavors, stirring frequently.
