Ingredients

  • 1 cup of black-eyed peas, soaked overnight
  • 1 cup of white rice
  • 4 cups of chicken broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 8 oz spicy sausage, sliced
  • 1 tsp of cumin
  • 1 tsp of paprika
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Cook until the vegetables are softened.
  2. Add the spicy sausage and cook until browned.
  3. Add the black-eyed peas, rice, chicken broth, cumin, paprika, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 30 minutes or until the black-eyed peas and rice are cooked and tender.
  5. Remove from heat and let it sit for 5 minutes.
  6. Serve the Hoppin’ Juan hot, garnished with chopped cilantro.
