Forget the boxed version and make your own instead. This homemade Rice-A-Roni mixes rice and pasta in a herby and savory broth.

Ingredients

  • 3tbspbutter
  • 1cupspaghettior vermicelli, broken into ½ inch pieces
  • 1½cupslong grain white rice
  • 4cupschicken broth
  • ½tspsalt
  • ½tspgarlic powder
  • ½tsponion powder
  • ¼tsppepper
  • 2tbspparsleychopped
  • ½cuptomatoesdiced, optional

Instructions

  1. Melt the butter in a large pan over medium heat.

  2. Add the pasta to the pan and cook for about 3 to 5 minutes or until browned.

  3. Add the rice to the pan and cook for 1 more minute.

  4. Add the chicken broth, salt, garlic powder, onion powder and pepper to the pan.

  5. Bring the mixture to a simmer. Cover the pan and turn the heat to low.

  6. Cook for approximately 15 minutes or until all the liquid is absorbed. Fluff with a fork and sprinkle with parsley.

  7. Stir in tomatoes if using, then serve.
