How To Make Dee’s Mexican Rice

This Mexican rice is an easy and spicy rice recipe that can be turned into a main dish when added with black beans to the rice when cooking.

Ingredients

  • 1tbspVegetable Oil
  • 1tspground turmeric
  • 1tspgarlic powder
  • ½tspground cumin
  • ½tspground coriander seed
  • 2tsppaprika
  • pinchred pepper flakes
  • pinchCayenne pepper
  • 3green onions
  • 1green bell pepper,chopped
  • 1cupcorn kernels,pre-cooked
  • 2small tomatoes,diced
  • ¼cupketchup
  • 2cupscooked rice
  • salt,to taste

Instructions

  1. Heat oil in a wok-style pan with turmeric, garlic powder, cumin, coriander, paprika, chili flakes, and cayenne pepper. Add the green onions and the green peppers. Saute for 1 to 2 minutes over medium-high heat.

  2. Add corn and tomatoes then saute until tomatoes release their juices. Add ketchup and stir until mixed.

  3. Add rice and stir until heated thoroughly. Salt to taste.
