No longer a kid’s meal, these quesadillas have avocado slices and chopped tomatoes for a delicious meal. It’s quick and easy for busy or lazy nights!

Ingredients

  • 8 tortillas
  • cup tomatoes, chopped
  • 1 avocado
  • 1 ½ cup cheddar cheese, grated

Instructions

  1. Chop the tomato and thinly slice the avocado.
  2. Sprinkle each tortilla with cheese.
  3. Top with tomato and avocado slices.
  4. Fold over the tortilla and place in a sandwich press.
  5. Cook for 5 minutes and cut the quesadilla in half.
