How To Make Mini Mexican Pizzas
These mini Mexican pizzas are great for changing up your pizza nights. A tortilla crust is topped with turkey, beans, salsa, and cheese.
Serves:
Ingredients
- 4large Whole Wheat Flour Tortillas,(or enough to cut out small 12 circles)
- 1cupturkey meat,cooked
- ½salsa
- 2tsptaco seasoning
- ½cuplow-fat refried beans
- ½cuplow-fat Mexican blend cheese,(or 2% shredded cheese)
For Optional Toppings:
- black olives
- lettuce,shredded
- low fat sour cream
- tomatoes,chopped
Instructions

Preheat oven to 425 degrees F.

Spray 12-count muffin tin with non-stick cooking spray.

Start by laying each tortilla out individually on a flat surface, and use an empty can, glass cup, or cookie cutter to cut 3 to 4 medium circles out of each wrap. Press each wrap circle into the muffin tin.

In small bowl mix together the ground meat, salsa, taco seasoning, and refried beans. Stir until well combined. Scoop ⅛ cup of meat mixture in each wrap.

Top with shredded cheese, and olives.

Bake in preheated over for 12 to 15 minutes, or until cheese is melted.

Swerve with a side of salsa, low-fat sour cream, chopped tomatoes, and or shredded lettuce if desired!
