A wonderful take on Italian and Mexican fusion. This taco pasta with chips recipe has taken the luscious flavors from pasta tomato sauce and married it with Mexican flavors to create this decadent feast.

Ingredients

  • 1 lb lean ground beef
  • 1 tbsp chili powder
  • 1 tsp dried oregano
  • 1 sweet green pepper, chopped
  • 2 cups pasta sauce
  • 4 cups wagon wheel pasta
  • cup sour cream
  • cup cheddar cheese, shredded
  • 12 tortilla chips

Instructions

  1. In a large skillet, brown beef over med-high heat, breaking up with back of spoon, until no longer pink.
  2. Drain off any fat.
  3. Add chili powder, dried oregano and chopped green pepper; cook for 1 min.
  4. Pour in pasta sauce; simmer, stirring occasionally, for about 5 minutes.
  5. Add pasta to sauce and meat.
  6. Toss to coat.
  7. Serve garnished with sour cream, cheese and chips.
