Sautéed Garlic Mostaccioli Recipe

All the colors of the Italian flag are in this dish, with green broccoli, red pepper, and white Mostaccioli noodles. The garlic sauce ties all these elements together to make it a flavorful yet simple pasta dish.

Ingredients

  • 2 cups fresh red peppers, chopped
  • 3 cups fresh broccoli
  • 16 oz. Mostaccioli noodles
  • 10 garlic cloves
  • 2 tbsp olive oil
  • ½ cup Parmesan cheese, grated
  • Black pepper, to taste
  • Parsley, chopped, as desired

Instructions

  1. Chop up the red peppers into diced pieces. Chop up the broccoli.

  2. Heat a large non-stick skillet for 3 minutes.

  3. Toss in peppers and broccoli. Stir frequently until the broccoli is tender, for about 10 minutes.

  4. In another pot, fill it with water and add the noodles with a sprinkle of salt.

  5. Cook noodles until tender and drain. Set the noodles aside.

  6. In a third saucepan, sauté the garlic in the olive oil until slightly brown.

  7. Toss in the cooked pasta, cooked vegetables, Parmesan cheese, black pepper, and parsley.

  8. Mix together and serve.
