Turkey Jambalaya Recipe

Cajun seasoning and chorizo make this a southern classic without the seafood.

Make use of those leftover Thanksgiving turkey by turning them into this delicious turkey jambalaya.

Ingredients

  • 1 ½ cup water
  • 1 cup celery, chopped
  • 1 cup green pepper, chopped
  • 1 cup onion, chopped
  • 1 lb chorizo, cut into small chunks
  • 1 tbsp Cajun seasoning
  • 1 tsp vegetable oil
  • 14 ½ oz tomatoes, undrained, stewed
  • 2 cups turkey, chopped, cooked
  • 3 cups Minute White Rice, uncooked

Instructions

  1. In a large skillet, cook and stir celery, green pepper, onion, and chorizo in hot oil over medium-high heat for 5 minutes or until chorizo is cooked through.

  2. Add tomatoes with their liquid, the water, turkey and seasoning; mix well.
  3. Bring to boil.
  4. Stir in rice.
  5. Reduce heat to low; cover.
  6. Simmer for 5 minutes.

  7. Remove from heat.
  8. Let stand, covered, 5 minutes.
  9. Mix lightly before serving.
