Rink Tum Tiddy Cheesy Tomato Egg Recipe

This is a classic New England combination of tomato, onion, cheese and egg on toast. An interesting combination, but you can’t fight tradition.

This delicious dish is easier than it sounds! A cheesy tomato meal incorporated with scrambled egg that is satisfyingly simple.

Ingredients

  • 2 cups canned tomatoes
  • 1 tsp salt
  • 1 tsp sugar
  • tsp pepper
  • dash cayenne pepper
  • 1 tbsp onion, chopped
  • ½ lb cheese
  • 1 tsp butter
  • 1 egg
  • buttered toast , or crackers

Instructions

  1. Heat the tomatoes and add all the seasonings.
  2. When hot, melt in the cheese that has been cut into bits, adding it gradually while stirring constantly.
  3. When smooth, add the butter and the egg beaten, stirring all the while.
  4. Serve on slices of hot buttered toast or hot crackers.
