Pan-seared salmon that’s seasoned simply should be on your dinner rotation. The crust is crisp and the inside is still tender and juicy.

  • 1tbspextra virgin olive oil
  • ½tspkosher salt
  • freshly ground black pepper
  • 4pcssalmon fillets,(6 oz), 1¼ in thick

Instructions

  1. Season the salmon with the salt and a few grinds of pepper. Heat the oil in a 12-inch nonstick skillet over medium-high heat until hot and shimmering.

  2. Cook the salmon for about 4 minutes, without moving, skin side up, until golden and crisp. Carefully flip the fillets and reduce the heat to medium.

  3. Continue cooking for 4 to 5 minutes, until desired doneness. Transfer to a platter and serve.
