  • 1tspolive oil
  • ½white onion,coarsely chopped
  • 2garlic cloves,chopped
  • 1jalapeno,seeded and chopped
  • 1lbground beef,90% lean
  • ½tspblack pepper
  • ½tspground cinnamon
  • ½tspground ginger
  • ½tspturmeric
  • 1tspkosher salt
  • 1tspground cumin
  • 1tspground coriander
  • 1bunchcollard greens,8 leaves, stems removed sliced into 1-inch srips
  • 15grape tomatoes,quartered
  • 1tsplemon juice


  1. Warm the olive oil in a large skillet over medium heat.

  2. Add the onion and saute for about 4 minutes, or until soft.

  3. Add the garlic and jalapeño and saute for about 1 minute, until fragrant.

  4. Add the ground beef and seasonings and cook for about 6 to 8 minutes, until browned.

  5. Add the collard greens and tomatoes and saute for about 4 minutes, until wilted.

  6. Stir everything gently as it cooks, careful not to mush the tomatoes.

  7. Add the lemon juice, season with salt and pepper to taste and serve.
