Ingredients

  • 4 cod fillets
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 clove garlic, minced
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame seed
  • 1 tbsp lime juice
  • cup quinoa
  • 3 cups water
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a saucepot, mix the honey, soy sauce, garlic, rice wine vinegar, lime juice, and sesame seeds over medium heat. Bring the pan to a simmer and simmer for 2 minutes before taking the pan off the heat.
  3. Season the cod with salt and ground black pepper.
  4. Bake the cod for 4 minutes and take it out of the oven.
  5. Brush some of the honey soy sauce glaze over the cod. Bake for 6 more minutes and brush with the rest of the glaze.
  6. Meanwhile, boil water in a pot and add the quinoa.
  7. Lower the heat, cover the pot and simmer for 15 minutes.
  8. Serve the cod with quinoa and your choice of salad or veggies. Garnish with chopped parsley.
