How To Make Gambas al Ajillo (Shrimp with Garlic)
Gambas al Ajillo is a popular Spanish dish of sauteed shrimp, garlic, and olive oil. This recipe adds a bite of hot pepper and parsley for extra flavor!

Ingredients
- 1½cupsolive oil
- 6medium garlic cloves
- 20medium shrimp
- 1hot pepper
- 1tbspfresh parsley,chopped
Instructions

Preheat the oven to 250 degrees F.

Place 3 serving crocks or soufflé molds in warm oven until ready to use.

Pour olive oil into large, deep skillet. Heat over medium high heat for about 1½ minutes, until the oil reaches 325 degrees F on a deep-fry thermometer or until a shrimp dipped in the oil sizzles briskly.

Add the garlic and pepper; cook for about 1 minute. Add half the shrimp, and should be about ⅓ covered with oil.

Cook for 30 to 45 seconds, until golden on one side. Using tongs, turn shrimp and cook for another 30 seconds.

Using a heat-proof slotted spoon, transfer shrimp and garlic to warmed crocks, dividing evenly and discarding the pepper.

Add the remaining shrimp to the oil and repeat. Carefully pour some hot oil over each portion.

Garnish with parsley, serve, and enjoy!
