- 10MorningStar Farms® Veggie Sausage Links,(1 pkg)
- ¾cuponion,chopped
- 2clovegarlic
- 2tspvegetable oil
- 2cupsbaby carrots
- 1smallgreen or red bell pepper
- 2canGreat Northern beans
- 1canItalian-style stewed tomatoes
- ½cupvegetable broth
- ¼cupfresh parsley,chopped
- 1tspthyme leaves,dried
- tspground red pepper
- ¼cupfresh parmesan cheese,shaved or finely shredded, optional
Instructions

Cook Morningstar Farms® Veggie Sausage Links according to package directions. Cut into bite-size pieces. Set aside.

Meanwhile, in large nonstick skillet cook onion and garlic in oil until tender. Stir in carrots and bell pepper. Cook and stir for 2 minutes.

Stir in beans, undrained tomatoes, broth, parsley, thyme, and ground pepper. Bring to boiling. Reduce heat. Simmer, uncovered, for 10 minutes. Stir in sausage link pieces. Heat through.

Ladle into serving bowls. Sprinkle with cheese, if desired.
