This is a fun way to jazz up your meatloaf with salsa, corn and tortilla chips!


How To Make Southwest Meatloaf

Have a taste of this border-style meatloaf. Prepare your salsa, it's going to be really saucy.

Ingredients

  • ½ lb. ground beef
  • ¾ cup corn tortilla chips, crushed baked,
  • 1 large egg
  • 15 ¼ oz. whole-kernel corn, drained
  • 11 oz. salsa

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, mix ground beef with tortilla chips, egg, corn, salsa, salt, and black pepper just until well-combined.

  3. Transfer meat mixture to a 14x10-inches roasting pan. Shape the meat into a 10x5-inch loaf.

  4. Spread the remaining salsa on top of the loaf.

  5. Bake the meatloaf for about an hour or until the temperature reaches 160°C.

  6. Let meatloaf stand for 10 minutes for easier slicing.
