Chicken Kabobs with Lemon Marinade Recipe

This simple marinade is reminiscent of Greek flavors because it uses a lot of lemon juice. The flavor is amazing and the chicken will be juicy and tender.


How To Make Chicken Kabobs with Lemon Marinade

Ingredients

  • 2 chicken breasts, cubed
  • 1 red peppers, cut into large chunks
  • 1 red onion, cut into wedges with root intact
  • 1 white onion, cut into wedges with root intact
  • 8 mushrooms
  • 8 cherry tomatoes

Chicken Marinade

  • ½ cup olive oil
  • 2 lemons, juiced
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder

Instructions

Chicken Marinade:

  1. Whisk all ingredients together.

  2. Transfer in a Ziploc bag.

  3. Marinate chicken for 1 hour in the refrigerator.

To assemble:

  1. Slide chicken and desired vegetables onto skewers.

  2. Rub with olive oil to avoid sticking to the grill.

  3. Salt and pepper all sides.

  4. Grill on medium-high for about 3-6 minutes on each side (varies by grill).
