Green Lentil Burgers Recipe

How To Make Green Lentil Burgers

Who says burgers are just for meat lovers? These lentil burgers with celery and molasses are every bit as filling and savory as their meaty counterparts.

Serves:

Ingredients

  • 1cupgreen lentils,rinsed
  • 2cupswater
  • 1tspsalt
  • 2tbspcanola oil
  • 1cupcelery,finely chopped
  • 1red onion,finely chopped
  • 1tbspfancy molasses
  • 1tspground ginger
  • 1tspdry mustard
  • 1tbspcanola oil,or as needed

Instructions

  1. Combine the water, lentils, and salt in a saucepan, then bring to a boil, reduce heat to medium, and cook for 20 minutes until all the water has been absorbed and lentils are nicely cooked. Transfer to a large bowl.

  2. Mash the lentils with a potato masher, then set aside.

  3. Heat 2 tablespoons of canola oil in a skillet over medium-high heat. Sauté the celery and red onion in hot oil for 5 to 7 minutes until tender.

  4. Drain and discard excess oil and transfer celery and onion to a bowl.

  5. Stir the molasses, ginger, and mustard together in a small bowl, then stir into the celery mixture until the celery and onion are evenly coated.

  6. Stir the celery mixture into the mashed lentils. Shape the lentil mixture into 6 patties.

  7. Heat 1 tablespoon canola oil in a skillet over medium heat, then fry the patties in hot oil hot for 5 to 7 minutes per side until firm in the center.

  8. Serve in burger buns, and enjoy!
