Corn Fried Rice Recipe

Corn fried rice is a perfect side to serve throughout the summer months. You can always add more vegetables into this fried rice recipe to give it a more seasonal and unique taste. Give this simple and filling recipe a try!

Ingredients

  • 1 egg, beaten
  • 2 tbsp. peanut oil
  • 4 scallions, sliced
  • 1 garlic clove, minced
  • ½ tsp. sugar
  • ½ tsp. salt
  • 1 tbsp Chinese rice wine
  • 1 cup frozen corn, thawed
  • 2 cup rice, cooked

Instructions

  1. Heat 1 tbsp peanut oil over medium-high heat in a large skillet.
  2. Add beaten egg and scramble until thoroughly cooked.
  3. Remove and set aside.
  4. Add remaining peanut oil to the skillet and heat over high.
  5. Add scallions, minced garlic, sugar, and salt.
  6. Stir-fry for roughly 30 seconds.
  7. Add rice wine and frozen corn.
  8. Continue to stir-fry for 1 minute.
  9. Add cooked rice and continue to stir for 3-4 minutes or until rice begins to brown.
  10. Add in scrambled egg, and season with salt.
  11. Remove from heat and cool before serving.
