A moist and flavorful lemon cake, bursting with blueberries and made in a crockpot.

Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1 egg
- 1 cup fresh blueberries
Instructions

Grease the crockpot with cooking spray or butter.

Combine flour, sugar, baking powder, and salt in a medium-sized bowl.

Add milk, oil, lemon juice, zest, and egg to the same bowl. Mix until smooth.

Fold in blueberries gently.

Pour the batter into the crockpot.

Place a paper towel or a cloth between the lid and the crockpot.
