Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 egg
  • 1 cup fresh blueberries

Instructions

  1. Grease the crockpot with cooking spray or butter.

  2. Combine flour, sugar, baking powder, and salt in a medium-sized bowl.

  3. Add milk, oil, lemon juice, zest, and egg to the same bowl. Mix until smooth.

  4. Fold in blueberries gently.

  5. Pour the batter into the crockpot.

  6. Place a paper towel or a cloth between the lid and the crockpot.

  7. Cook for 3-4 hours on low heat until toothpick inserted comes out clean.

  8. Serve warm with vanilla ice cream.
