How To Make Crock Pot Chicken Cacciatore

Unlike the traditional chicken cacciatore, this is a skin-off version that doesn’t need any deep-frying and is instead slow-cooked until tender.

Total: 5 hours 10 minutes

Serves:

Ingredients

  • 8chicken thighs,with the bone, skin removed
  • 28oztomatoes
  • ½red bell pepper,sliced into strips
  • ½green bell pepper,sliced into strips
  • ½large onion,sliced
  • 1tspdried oregano
  • 1bay leaf
  • salt and fresh pepper,to taste
  • ¼cupherbs,(such as basil or parsley), fresh, for topping

Instructions

  1. Season chicken with salt and black pepper and place in the slow cooker.

  2. Pour tomatoes over the chicken, top with onions and peppers, add oregano, bay leaf, salt and pepper, give it a quick stir and cover.

  3. Set crock pot to Low for 8 hours or High for 4 hours.

  4. When the timer beeps, remove lid and keep the crock pot on High for 1 hour to help it thicken.
