How To Make Sweet Potato and Pecan Casserole

Sweet potato casserole is a Thanksgiving staple and it even tastes better with the added crunch of chopped pecans.

Ingredients

  • 3 cups sweet potatoes, cooked , mashed
  • ½ cup sugar
  • 2 eggs, beaten
  • ¼ tsp salt
  • ¼ cup margarine, melted
  • ½ cup milk
  • ½ tsp vanilla extract
  • ½ cup brown sugar, firmly packed
  • cup all-purpose flour
  • 1 cup pecans, chopped
  • 3 tbsp margarine, melted

Instructions

  1. Combine potatoes, sugar, eggs, salt, the ¼ cup margarine, milk, and vanilla.

  2. Spoon into an ungreased 1 to 1 ½ quart baking dish.

  3. Combine brown sugar, flour, nuts and the remaining 3 tablespoons of margarine, spread over sweet potato mixture.

  4. Bake at 350 degrees F for 35 minutes.
