Ingredients

  • 1 box mashed potatoes
  • salt, to taste
  • 2 tbsp margarine
  • 1 ½ lb lean ground beef
  • 1 onion, large, chopped
  • 3 garlic cloves, minced
  • 8 oz fresh mushrooms
  • 1 can condensed tomato soup, (10 oz)
  • salt , to taste
  • seasoned pepper, to taste
  • 1 ½ cups cheddar cheese, shredded

Instructions

  1. Prepare mashed potatoes according to box instructions.
  2. In a large skillet, saute ground beef, onion, and garlic until meat is browned.
  3. Add mushrooms and cook until tender. Drain fat.
  4. Stir in soup and mushrooms; season with salt and pepper.
  5. Simmer for 2 minutes until mushrooms are tender.

  6. Pour into a greased 2-quart casserole.

  7. Spoon mashed potatoes over the beef mixture, and sprinkle cheese over all.
  8. Bake, uncovered, in a 350 degree F oven for about 35 minutes, until mixture is bubbly and cheese begins to brown.
