Ingredients

  • 8tbspbutter,unsalted, divided
  • 4chicken breasts,boneless, skinless
  • ½yellow onion,chopped
  • 1red bell pepper,chopped
  • 2garlic cloves,minced
  • ½tspground black pepper,coarse
  • 10¾ozcondensed cream of chicken soup
  • 1cupsour cream
  • ½cupwhole milk
  • 28Ritz crackers,crumbled
  • 1cupcheddar cheese,shredded

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Add 2 tablespoons of butter to a large skillet on medium heat, and cook the chicken for 4 to 5 minutes on each side before moving the chicken to a plate. Roughly chop the chicken.

  3. Add 2 more tablespoons of the butter with the onion, bell pepper, garlic, and black pepper on medium heat and cook for 4 to 5 minutes, until the onions are translucent.

  4. Add in the cream of chicken, sour cream and milk and mix well then pour the mixture into your baking dish.

  5. Melt the remaining 4 tablespoons of butter and mix with the Ritz crackers and cheddar cheese.

  6. Sprinkle it over the chicken, then bake for 30 to 35 minutes.
