Ingredients
- 1 lb. ground beef
- 1/2 cup cracker crumbs
- 1 yellow onion, finely chopped
- 1 egg
- Oil, as needed for frying
- 4 russet potatoes
- 1 can cream of chicken soup
- Salt and pepper, to taste
Instructions

Mix ground beef, crumbs, onion, and egg well. Add salt and pepper to taste.

Shape the meat into balls and fry in oil until brown.

Peel the potatoes and cut them into quarters. Boil until tender.

Place potatoes and meatballs into a casserole dish. Add soup and 1 soup can full of water.

Bake at 350°F for about 30 minutes. Serve.
