Ingredients

  • 16 oz creamed corn
  • 1 cup cheddar cheese, shredded
  • cup yellow cornmeal
  • 1 cup sour cream
  • 1 stick butter, melted
  • 1 large onion, chopped
  • 1 small green bell pepper, chopped
  • 1 small red bell pepper, chopped
  • 3 eggs
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven at 350 degrees F.
  2. In a medium sauté pan, heat 2 tablespoons of butter over medium heat.
  3. Add onion and peppers and cook until softened, stirring occasionally. then remove from heat.
  4. Combine the remaining butter, eggs, and sour cream in a large bowl. Whisk together until smooth.
  5. Mix in the corn, cornmeal, salt, and pepper.
  6. Then add in cheese, onion, and peppers.
  7. Turn into a 2-quart buttered baking dish.
  8. Bake in oven for 30 to 35 minutes, until puffed and golden.
  9. Serve hot.
