What makes this cheesy chicken casserole a cut above the rest is the creaminess and milky flavor from Parmesan and Cheddar cheese that go well with peppers.

  • 3cupsshell noodles,uncooked
  • 3tbspbutter
  • cupred bell pepper,diced
  • 1onion,finely diced
  • ½tspseasoning salt
  • 1tspchili powder
  • 10¾ozcream of chicken soup,condensed
  • 1⅓cupsmilk
  • 3cupssharp cheddar cheese,shredded, divided
  • cupparmesan cheese,shredded
  • 4ozmild green chiles
  • 3cupscooked chicken


  1. Heat oven to 375°F.

  2. Cook shells al dente according to package directions.

  3. Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.

  4. In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese.  Mix well. Stir in chicken, pasta and green chiles.

  5. Spread into a 9×13 casserole dish. Top with remaining cheese.

  6. Bake 30-35 minutes or until hot and bubbly.
