  • 4lbspotatoes,peeled and cut into chunks
  • 8ozcream cheese,softened
  • ½cupbutter,cubed
  • ½cupsour cream
  • ¼cupmilk
  • 1tspgarlic powder
  • 1tspsalt
  • ½tsppepper
  • 2cupsmild cheddar cheese,shredded, divided
  • 6slicesbacon,cooked and crumbled
  • 2tbspchives,finely chopped


  1. In a large pot, bring potatoes to a boil and cook for 15 to 20 minutes until tender. Drain.

  2. Preheat oven to 350 degrees F. Spray a 9×13-inch pan with cooking spray. Add cream cheese, butter, sour cream, milk, garlic powder, salt and pepper to potatoes and mash. Fold in 1½ cups mild cheddar cheese.

  3. Spread in 9×13-inch dish and top with remaining cheddar cheese.

  4. Bake uncovered for 40 to 45 minutes or until heated through. Top with bacon bits and chives.
