How To Make Breakfast Casserole with Spinach and Feta

This easy-to-make breakfast casserole is loaded with eggs, Feta cheese, tomatoes, and lots of healthy spinach, for a filling meal!

Ingredients

  • olive oil spray
  • 1tspolive oil
  • 3shallots,chopped
  • 6ozbaby spinach,(1 bag)
  • 24large eggs,beaten
  • 2cups2% milk
  • ½cupheavy cream
  • 12ozfeta cheese,crumbled
  • 3scallions,chopped
  • 3plum tomatoes,seeded, diced
  • tspkosher salt
  • black pepper,to taste

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9x13x3-inch Pyrex Deep baking dish with oil.

  2. Heat a large skillet over medium heat. Add the oil and shallots and cook until soft for 6 to 8 minutes.

  3. Add the spinach and cook until wilted. Remove from heat.

  4. In a large bowl, whisk the eggs, milk, heavy cream, Feta, scallions, tomatoes, salt, and black pepper. Mix in the spinach and shallots, then pour into the prepared dish.

  5. Bake for about 1 hour 20 minutes until the center is solid and cooked through.

  6. Serve warm, and enjoy!
