This zucchini frittata recipe is for anyone who loves zucchini. This egg-based dish is similar to a quiche and it takes less than 20 minutes to prepare!
How To Make Zucchini Frittata
Ingredients
- 2 small garlic cloves
- 1 tbsp olive oil, for sautéing
- 1 medium zucchini
- 1/2 bunch basil
- Salt and pepper, to taste
- 8 eggs
- 2 tbsp milk
- 1/4 cup Parmesan, grated
Instructions

Preheat the broiler.

Crush the garlic and heat it in the olive oil in a medium nonstick sauté pan on the stove.

Slice the zucchini very thinly on a mandolin. When the oil and garlic are heated, add the basil and sliced zucchini into the pan.

Cook until the zucchini is tender but not cooked through, for about 2 minutes. Season with salt and pepper.

Blend eggs in a blender on the highest speed with a little bit of milk and some salt and pepper. Pour the egg mixture into the sauté pan and let it sit for 1 minute.

When the egg is almost fully cooked, add the grated Parmesan on top and place the pan in the broiler for 1 minute.

Take the pan out of the broiler, let it cool and set in the pan for 5 minutes.

Once cooled, invert a plate on top of the pan and turn over. Slice and serve.
