Jazz up any meal with this cheesy garlic potato dish! They’re cooked in foil pockets for even more tender on the inside and crunchy on the inside spuds.

  • 2lbsred potatoes,cut into 1-inch pieces
  • 2tbspolive oil
  • ½cupparmesan cheese,grated
  • 3garlic cloves,minced
  • 1tbspItalian seasoning
  • ¼tspsalt
  • ¼tsppepper
  • parsley,chopped, for garnish
  • parmesan cheese,freshly grated


  1. In a large bowl, add red potatoes, olive oil, parmesan cheese, garlic, Italian seasoning, and salt and pepper. Toss until coated.

  2. On a sheet of aluminum foil, add the potatoes. Fold in the sides to create a foil pack.

  3. Place on the grill on medium high heat and grill for 20 to 30 minutes or until tender.

  4. Garnish with chopped parsley and freshly grated parmesan cheese.
