How To Make Grilled Sweet Potatoes

These easy grilled sweet potatoes are coated with a fresh lime and cilantro dressing for a more flavorful bite! Cook up a serving in just under one hour.

Serves:

Ingredients

  • lbssweet potatoes,peeled, cut into 8 wedges each
  • 2tbspolive oil
  • salt and pepper,to taste

For Dressing:

  • ¼cupolive oil
  • 3tbsplime juice
  • 2tsphoney
  • ½tspchili powder
  • ¼tspcumin
  • ¼cupcilantro leaves,coarsely chopped, plus more for garnish
  • salt and pepper,to taste

Instructions

Sweet Potatoes:

  1. Bring a pot of salted water to a boil. Add the sweet potatoes, then cook for 7 to 10 minutes or until just tender.

  2. Preheat an outdoor grill or indoor grill pan to medium high heat.

  3. Drain the potatoes, then drizzle them with 2 tablespoons olive oil, and season with salt and pepper to taste. Toss gently to coat.

  4. Place the sweet potatoes on the grill. Cook for 3 to 4 minutes per side or until browned.

Dressing:

  1. Place olive oil, lime juice, honey, chili powder, cumin, cilantro leaves, and salt and pepper in a medium bowl. Whisk until well combined.

  2. Drizzle the dressing over the warm potatoes.

  3. Serve warm, garnished with additional cilantro, and enjoy!
