How To Make Grilled Scallops Over Mixed-Green and Herb Salad
These well-spiced grilled scallops are satisfying, served over a combination of fresh greens and herbs salad tossed with a simple and tasty dressing!

Ingredients
- 1lbsea scallops
- 1tbspolive oil,plus an additional ½ cup
- ¾tspsalt
- ½tspfresh black pepper,ground
- 4tspsherry vinegar,or red or white-wine vinegar
- ½lbmixed salad greens,(about 4 quarts)
- ¾cupbasil leaves,loosely packed
- ¾cupflat-leaf parsley leaves,loosely packed
- ½cupmint leaves,loosely packed
- ¼cupfresh chives,or scallion tops, chopped
- 4tspcapers,drained
Instructions

Light the grill or heat the broiler.

Toss the scallops with 1 tablespoon of oil, ¼ teaspoon of salt, and ¼ teaspoon of pepper.

In a glass or stainless-steel bowl, whisk together the vinegar and the remaining ½ teaspoon salt and ¼ teaspoon pepper. Add the ½ cup of oil slowly, whisking.

Grill or broil the scallops, turning once, for about 2 to 3 minutes per side until they just become opaque in the center.

In a large glass or stainless-steel bowl, combine the mixed greens, basil, parsley, mint, and chives.

Toss the salad with the dressing and put it on plates. Serve and enjoy!
