How To Make Grilled Salmon with Avocado Chimichurri

Enjoy a satisfying meal with this grilled salmon complemented with the flavors of avocado chimichurri made with parsley, cilantro, and red wine vinegar.

Ingredients

For Salmon:

  • 24ozsalmon fillets,(4 fillets), skinless
  • 1tbspolive oil,plus more for brushing grill
  • salt and freshly ground black pepper
  • 1tspground cumin

For Avocado Chimichurri:

  • 1small avocado,diced
  • ¼cupfresh parsley,finely minced
  • 2tbspfresh cilantro,finely minced
  • 1tspdried oregano
  • tspgarlic,minced
  • tbspred wine vinegar
  • 1tbspfresh lemon juice
  • 2tbspminced red onion
  • 3tbspextra virgin olive oil
  • 2tbspwater
  • tspred pepper flakes,optional

Instructions

  1. Preheat a gas grill to 425 degrees F.

  2. Brush both sides of salmon with olive oil., then season with salt, pepper, and cumin.

  3. Brush grill grates with oil, place salmon on grill, and grill for about 3 minutes per side, or to the desired doneness. Serve salmon immediately topped with avocado chimichurri.

  4. To prepare chimichurri, in a small mixing bowl, toss together all chimichurri ingredients while seasoning with salt and pepper to taste.
