How To Make Potato Sausage
Add a dish to your arsenal of one-pot meals with this potato sausage recipe. It's flavored with peppers, onions, and Italian seasoning.

Ingredients
- smoked sausage, 1 package, cut into 1-inch slices
- 3 lb Terrific Trio Little Potatoes, 1 package, sliced in half
- 1 green bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red bell pepper, or orange bell pepper, cut into 1-inch pieces
- 1 onion, medium, sliced
- 2 tsp. garlic, minced
- ¼ cup chicken stock
- 1 tbsp. olive oil
- 1 tsp. dried rosemary
- 1 tsp. dried thyme
- salt, to taste
- pepper, to taste
Instructions

Preheat oven to 400 degrees F.
- Combine sausage, potatoes, bell peppers, onion, garlic, chicken broth, olive oil, rosemary, thyme and salt & pepper in a large bowl.
- Stir well to make sure everything is coated with seasonings.

Pour mixture into a large cast iron pan or 9x13-inch baking dish.

Place in the oven (uncovered).
- Bake for 30 minutes or until potatoes are lightly browned and vegetables are tender.
- Give the mixture a gentle stir after removing from the oven. Then serve!
