Ingredients

  • ¼ cup yellow cornmeal
  • ¼ cup Parmesan cheese, grated
  • 1 tsp paprika
  • ¼ tsp chili flakes
  • 16 oz dill pickle, quartered lengthwise
  • cooking spray

For Serving:

  • cup dipping sauce, of your choice

Instructions

  1. Preheat oven to 450 degrees F.
  2. Combine cornmeal, parmesan cheese, paprika, and chili flakes in a shallow dish or pie plate; stir well.
  3. Press pickle slices between paper towels until barely moist; dredge in cornmeal mixture.
  4. Place pickles on a large baking sheet lined with parchment paper.
  5. Lightly coat pickles with cooking spray.
  6. Bake for 12 minutes or until golden. Let stand 5 minutes before serving.
  7. Serve with any combination of dipping sauces.
