  • 1lbzucchini,ends trimmed
  • 3tbspextra-virgin olive oil
  • ¼cupparmesan,freshly grated
  • kosher salt,to taste
  • ¼tspred pepper flakes,crushed

  2. Slice each zucchini crosswise, like an accordion, making sure not to cut all the way through the zucchini.
