How To Make Chicken Santa Fe
For this chicken Santa Fe recipe, chicken breasts are seasoned and baked with bell peppers, corn, beans, and lots of melted cheese for a quick dinner dish.

Ingredients
- 1tbspolive oil
- 4chicken breasts,boneless skinless
- 2tsptaco seasoning
- 1cupcheddar cheese,shredded
- ¾cupcanned black beans,rinsed and drained
- ⅓cupred bell pepper,diced
- ⅓cupcorn kernels,thawed if frozen
- 2tbspcilantro,chopped
- salt and pepper,to taste
Instructions

Heat the oil in a large oven safe pan over medium high heat. Preheat the oven to 400 degrees F.

Season the chicken on both sides with the taco seasoning, salt and pepper.

Cook the chicken for 4 to 5 minutes on each side or until cooked through. The time may vary depending on the thickness of the chicken.

Sprinkle the cheese evenly over the chicken breasts. Add the beans, red bell pepper and corn on top of the cheese.

Bake for 5 minutes or until cheese is melted. Sprinkle with cilantro and serve.
