How To Make Cheesy Meat and Veggie Stuffed Pumpkin
Try making this quick-prep cheesy meat and veggie stuffed pumpkin with ground beef and pork, spinach, cauliflower rice, Parmesan cheese, and spices.

Ingredients
- 2pumpkin,small, halved and seeded
- 2tbspbutter,softened
- ½lbground beef
- ½lbground pork
- 1cupspinach,fresh, chopped
- 1cupcauliflower rice
- 1onion,chopped
- 1tspground cinnamon
- 1tspsalt
- ½tspground black pepper
- ½tspgarlic powder
- ¼tspcayenne pepper
- 1cupParmesan cheese,shredded
Instructions

Preheat oven to 425 degrees F. Place pumpkin halves on a baking sheet, cut-side up. Spread butter on the inside of each half.

Bake in the preheated oven for about 50 minutes, or until flesh is tender.

Combine beef, pork, spinach, cauliflower rice, onion, cinnamon, salt, pepper, garlic powder, and cayenne pepper.

Fold in ½ of the Parmesan cheese. Fill each pumpkin half with mixture, then top each with remaining Parmesan cheese.

Bake in the oven for about 10 minutes more, or until filling is cooked through.
