How To Make Artichoke and Black Olive Baked Chicken

Savor a bite of this palatable baked chicken, cooked together with tender artichoke hearts, mixed in a rich white wine sauce, for a filling meal!

  • 4chicken breast,halves, bone in, with skin
  • 6chicken drumsticks
  • 6.5ozartichoke hearts,(2 jars), marinated, quartered, drained
  • 15ozblack olives,(1 can), drained
  • ½cupdry white wine
  • ½cupchicken broth
  • 1tbspfresh tarragon,chopped
  • salt and pepper,to taste


  1. Preheat the oven to 350 degrees F.

  2. Place the chicken breasts and drumsticks in a 9×13-inch baking dish, bone side down.

  3. Spread the artichokes and olives around the chicken, then mix the wine and broth together in a small bowl and pour the mixture all over the chicken. Sprinkle with tarragon and season with salt and pepper to taste.

  4. Bake for 1 hour, or until the chicken is cooked through, juices run clear and browned.

  5. Serve and enjoy!
