Sinful Stuffed Sweet Potatoes Recipe

Ingredients

  • 4 sweet potatoes
  • 1 cup cheddar cheese
  • 1 can black beans, cooked
  • ½ cup pumpkin seeds, toasted
  • ¾ cup Greek yogurt
  • cup cranberries, dried
  • 3 tbsp fresh lime juice
  • 2 tsp chili powder
  • 4 tbsp chives, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400 degrees F.

  2. Poke holes in sweet potatoes and bake on a baking sheet for about 40 to 45 minutes.

  3. Remove baked sweet potatoes from the oven. Cut open and scoop out a little bit of the potato to make room.
  4. Sprinkle each potato evenly with cheddar cheese and return them to the oven for about 3-5 minutes, or until the cheese melts.
  5. In a bowl, add Greek yogurt, lime juice, chile powder, salt and pepper to taste.
  6. Stuff each potato with black beans, dried cranberries, pumpkin seeds, and garnish with the spiced Greek yogurt and chives.
