Ingredients
- 1 courgette, grated
- 2 eggs
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup Greek yogurt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chopped walnuts (optional)
Instructions

Preheat the oven to 350°F (180°C). Grease and line a loaf pan.

In a large bowl, whisk together the eggs, sugar, oil, and Greek yogurt until well combined.

Add the grated courgette and mix well.

In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the courgette mixture, mixing until just combined. Do not overmix.

Fold in the chopped walnuts, if using.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
