How To Make Vegan Pecan Camembert Cheese Recipe

Ingredients

  • 1 cup of raw pecans, soaked overnight
  • 1/4 cup of rejuvelac or vegan yogurt
  • 2 tbsp of nutritional yeast
  • 1/2 tsp of salt
  • 1/4 cup of chopped pecans for topping

Instructions

  1. Drain the soaked pecans and add them to a food processor or blender.

  2. Add in the rejuvelac or vegan yogurt, nutritional yeast, and salt. Blend until smooth and creamy.

  3. Transfer the mixture into a cheesecloth-lined bowl and cover with a towel. Let it sit at room temperature for 24-48 hours until it starts to ferment and thicken.

  4. Once the cheese has thickened, shape it into a wheel and coat it with chopped pecans.

  5. Cover the cheese and refrigerate for at least 4 hours before serving.
