Ingredients

  • 4 strips bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups low sodium chicken broth
  • 2 cups heavy cream
  • 2 cups cauliflower florets
  • 2 cans minced clams, drained
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Chopped parsley or chives, for garnish

Instructions

  1. In a large pot or dutch oven, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside.

  2. Add onion to the bacon fat and sauté until translucent. Add garlic and cook for an additional 30 seconds.

  3. Pour in chicken broth, heavy cream, and cauliflower florets. Bring to a boil, then reduce heat and let simmer until cauliflower is fork-tender, about 10-12 minutes.

  4. Using an immersion blender or transferring to a blender, puree the mixture until smooth.

  5. Add minced clams, thyme, salt, and pepper. Let simmer for an additional 5-10 minutes until clams are heated through.

  6. Serve hot, garnished with bacon and chopped herbs.
