How To Make Low Carb Chicken Noodle Soup Recipe

A comforting and healthy soup made with zucchini noodles instead of traditional noodles.

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 tsp dried thyme
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 medium zucchinis, spiralized into noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.

  2. Add onion and garlic, cook until translucent.

  3. Add chicken broth, water, thyme, carrots, and celery. Bring to a boil and reduce heat to low. Simmer for 20 minutes.

  4. Add zucchini noodles and shredded chicken. Cook for 5-7 minutes until noodles are tender.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with fresh parsley.
