Ingredients

  • 1/2 cup of lime juice
  • 1/2 cup of skim milk
  • 1/2 cup of plain Greek yogurt
  • 1/4 cup of honey
  • 1/4 cup of cornstarch
  • 1/4 cup of water
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon of lime zest
  • 1/4 teaspoon of salt
  • 1 reduced fat graham cracker crust

Instructions

  1. Preheat oven to 375°F.

  2. In a medium saucepan, whisk together lime juice, milk, Greek yogurt, and honey over medium heat.

  3. In a separate bowl, whisk together cornstarch and water until smooth. Add to the saucepan and whisk.

  4. Continue whisking over medium heat until the mixture thickens, about 5-7 minutes.

  5. Remove from heat and whisk in vanilla extract, lime zest, and salt.

  6. Pour mixture into the graham cracker crust and bake for 10 minutes.

  7. Let cool for at least 30 minutes before serving.
